[v7.0] Fix collation_bucket.js for query_stats on 7.0

collation_bucket.js is failing on 7.0 with query stats passthroughs. This ticket was created for the original run of Query Stats with SERVER-81917, but the error could not be reproduced. It seems to be failing deterministically now as it fails on evergreen + locally. There was some time between the first commit of SERVER-75596 (10/6/2023) that was reverted and the final commit (12/6/2023) where commits could have fixed this issue. Comments on SERVER-81917 suggest it has been fixed since November 20, 2023. Fix might be related to SERVER-76855. Should try backporting it and see if the error still occurs.

Steps to Reproduce
To recreate locally, run buildscripts/resmoke.py run --suites=query_stats_mongos_passthrough jstests/aggregation/sources/bucket/collation_bucket.js --additionalFeatureFlags=featureFlagQueryStats To recreate on evergreen, you have to add the query_stats_mongos_passthrough to evergreen_nightly.yml see evergreen_nightly.yml changes to see changes that run the suite.
